Ingredients

Instructions
1. Create the First Skin
- Heat milk (and cream, if using) in a saucepan over medium heat.
- Warm until small bubbles form around the edges (do not boil).
- Pour into 2 small ceramic bowls.
- Let sit undisturbed for 10 minutes until a thin skin forms on top.
2. Drain the Milk
- Gently poke a small hole near the edge of the skin.
- Slowly pour the milk underneath into a mixing bowl.
- Leave the skin intact in the original bowl with a little milk remaining.
3. Make the Custard Base
- Add egg whites, sugar, and ginger juice into the warm milk.
- Stir gently until sugar dissolves.
- Strain through a fine mesh sieve for a smooth texture.
4. Recombine
- Slowly pour the mixture back into the bowls.
- Pour along the side so the first skin floats back on top.
5. Steam (Double Boil)
- Cover bowls tightly with foil or wrap.
- Steam over medium-low heat for 12–15 minutes.
6. Form the Second Skin
- Turn off heat and let sit in steamer for 5 minutes.
- A second skin will form on top, creating the signature double layer.
