Double Beauty Sweet Soup TCM Dessert

Ingredients (Serves 3 – 4)

  • Peach Gum: 20g
  • Snow Fungus: 1/2 large piece
  • Dried Lily Bulbs: 10g
  • Lotus Seeds: 15g
  • Red Dates: 4-5 pieces (Sliced to release more sweetness)
  • Goji Berries: 1 tablespoon
  • Dried Longan (Optional Addition): 10g
  • Rock Sugar: 40g-50g (Adjust to your preferred sweetness level)
  • Water: 1.2 Liters

Instructions

1. Preparation

  • Peach Gum: Soak in cool water for at least 12 hours. Once expanded, rinse thoroughly in a fine-mesh strainer to remove any small specks of bark or debris.
  • Snow Fungus: Soak for 30 minutes. Trim away the tight, orange-colored underside (the root) and tear the white “petals” into very small, bite-sized pieces. Smaller pieces help the soup become more gelatinous.
  • Prep Aromatics: Rinse the lotus seeds, lily bulbs, and goji berries. Slice the red dates in half and remove the pits to ensure the flavor infuses more quickly.

2. The Slow Simmer

  • Base Broth: Place the water, snow fungus, lotus seeds, and lily bulbs into a pot. Bring to a boil, then immediately turn the heat to low. Cover and simmer for 40 minutes.
  • Texture Build: Add the soaked peach gum, sliced red dates, and dried longan (if using). Continue to simmer on low for another 15–20 minutes. The peach gum should be soft but still hold its shape.

3. Finishing Touches

  • Sweeten: Stir in the rock sugar. Keep the heat low to allow it to melt slowly without burning.
  • Goji Berries: Add the goji berries at the very end and cook for only 3–5 minutes. This prevents them from becoming mushy or sour.

4. Serving Suggestion

For a different experience, try serving this at room temperature. The natural thickening agents from the snow fungus and peach gum will create a slightly heavier, more syrupy mouthfeel as it cools.
