Classic Chinese Red Bean Dessert Soup (About 4–6 servings)

Ingredients

  • 1¾ cups dried adzuki beans
  • 7½–8 cups water (adjust as needed)
  • ⅓–½ cup sugar (to taste)
  •  ¼ teaspoon finely grated orange zest
  • 2 tablespoons small tapioca pearls

Instructions

  1. Rinse the adzuki beans under cold running water until clean. Place them in a bowl, cover with water, and let soak overnight (about 8 hours).
  2. Drain the soaked beans and add them to a medium pot with about 6 cups of fresh water. Bring to a boil, then reduce the heat and let simmer gently for about 60 minutes. Add extra water during cooking if the liquid reduces too much.
  3. Once the beans are very soft and starting to break apart, use an immersion blender to lightly blend them. Aim for a slightly chunky texture rather than a completely smooth puree (unless you prefer it smoother).
  4. Return the mixture to a gentle simmer. Add more water if you’d like a thinner, more soup-like consistency. Stir in the sugar and orange zest, mixing until fully dissolved.
  5. Add the tapioca pearls and cook for 15–20 minutes, stirring occasionally, until the pearls turn fully translucent.
  6. Remove from heat and let cool slightly before serving. Enjoy warm or chilled.
