Healing Ginseng Chicken Soup

Ingredients

  • 1 whole silkie chicken, chopped into 5–6 pieces
  • 12 g ginseng root (Korean or American)
  • 8–12 dried red dates (jujube), pitted if desired
  • 1½ tablespoons dried goji berries
  • 1½ teaspoons salt (adjust to taste)
  • 1.8–2 liters water

Instructions

  1. Lightly rinse the ginseng, red dates, and goji berries under cool running water to clean off any residue. Set aside to drain.
  2. Add the chicken pieces to a large pot, then layer in the prepared herbs.
  3. Pour in the water and bring everything to a gentle boil over medium-high heat.
  4. Once boiling, lower the heat to maintain a slow simmer. Cover partially and let it cook for about 1 hour 50 minutes, allowing the flavors to fully develop.
  5. Skim off any foam or excess fat from the surface occasionally for a clearer broth.
  6. Season with salt near the end of cooking, adjusting to your taste.
  7. Turn off the heat and let the soup rest briefly before serving warm.
