Black Sesame Dessert Soup for Kidney Support (4 servings)

Ingredients
- 2/3 cup black sesame seeds (about 90 g)
- 1/3 cup granulated sugar (65 g)
- 1/3 cup water (for blending)
- 1/3 cup rice flour (50 g)
- 2.5 oz rock sugar (70 g)
- 4 cups water
Instructions
- Toast the sesame seeds
Place the sesame seeds in a dry pan over low heat. Stir continuously for a few minutes until they begin to crackle lightly and release a rich, nutty aroma. Remove from heat and let cool. - Grind into powder
Transfer the cooled seeds into a blender or food processor. Blend until finely ground. (A mortar and pestle can also be used for a more traditional texture.) - Make the sesame paste
Add the granulated sugar and pulse briefly to combine. Pour in the 1/3 cup water and blend again until a smooth, thick paste forms. - Prepare the soup base
In a pot, whisk the rice flour with 4 cups of water until no lumps remain. Add the rock sugar and heat gently, stirring often, until dissolved. - Combine and cook
Stir the sesame paste into the pot. Continue stirring over low heat until the mixture thickens and turns a deep black color. - Adjust consistency
Taste and adjust sweetness if needed. If the soup is too thick, gradually add more water until it reaches your preferred texture. - Serve warm
Ladle into bowls and enjoy while hot.
