Bird’s Nest Soup with Conpoy, Fresh Crab Nourishing Soup Recipe (Serves 4)
Ingredients

- 2 pieces dry bird’s nest (燕窝 / Yan Wo)
- 4–5 pieces dried scallops / conpoy (瑶柱 / Yao Zhu)
- 150g fresh crab meat (steamed & shredded)
- 2 egg whites (lightly whisked)

- 10–15g American ginseng slices (西洋参)
- ¼ cup fox nuts (莲子 / lotus seeds)
- ¼ cup barley (薏米 / Job’s tears)
Broth Base & Aromatics
- 4 cups (1L) premium chicken or superior stock
- 2 tbsp Shaoxing wine (divided)
- 2 slices fresh ginger
- 1 stalk green onion
Thickening & Seasoning
- 2.5 tbsp cornstarch slurry (mixed with 3 tbsp cold water)
- ½ tsp white pepper
- Sea salt, to taste
Prep
1. Soak & Clean Bird’s Nest
- Soak in water 4–6 hrs (or overnight) until soft and expanded
- Rinse, remove impurities, and drain
2. Prepare Conpoy (Scallops)
- Steam with ginger, green onion, and 1 tbsp Shaoxing wine for 30–40 mins
- Shred into fine threads
- Save the steaming liquid
3. Prep Herbs & Grains
- Soak barley for 1–2 hours
- Rinse fox nuts and lightly soak 30 minutes
- Rinse American ginseng slices
Cooking Instructions
Step 1: Par-cook Bird’s Nest (15 mins)
- Place soaked bird’s nest in a bowl with ~½ cup water
- Steam or double-boil for 15 minutes
- Set aside
Step 2: Build the Herbal Broth (25 mins)
In a soup pot, add:
- Chicken stock
- Conpoy + reserved liquid
- Barley, fox nuts, American ginseng
- Bring to a boil, then simmer 20–25 minutes until grains soften
Step 3: Add Crab & Bird’s Nest (2–3 mins)
- Gently add shredded crab meat and bird’s nest
- Simmer on low heat for 2–3 minutes
Step 4: Thicken the Soup (1 min)
- Stir soup in one direction
- Slowly add cornstarch slurry
- Simmer until silky and lightly thickened
Step 5: Create Egg White Ribbons (30 sec)
- Turn off heat
- Slowly drizzle egg whites while gently stirring
- Let residual heat form delicate silky strands
Final Seasoning
- Add white pepper
- Adjust salt to taste
Serving Suggestion
- Serve hot in small ceramic bowls
- Add a few drops of Zhejiang red vinegar just before eating
