Snow Fungus Tea Recipe, Collagen-Boosting Drink

Snow Fungus Tea (银耳茶) (2–3 servings)

Ingredients

  • 10–15 g dried snow fungus (银耳)
  • 6–8 red dates (红枣), pitted
  • 1–2 tbsp goji berries (枸杞)
  • 20–30 g rock sugar (冰糖), to taste
  • 4–5 cups water

Instructions

1.  Soak the snow fungus

  • Rinse and soak in cold water for 1–2 hours until fully expanded.
  • Trim off the hard yellow base and tear into small pieces.

2. Prepare the ingredients
Rinse red dates and goji berries. Pit the dates if not already done.

3. Simmer the tea
Add snow fungus and water to a pot. Bring to a boil, then reduce to low heat and simmer for 30–40 minutes until the texture becomes soft and slightly gelatinous.

4. Add remaining ingredients
Add red dates and rock sugar. Continue simmering for another 10–15 minutes.

5. Finish with goji berries
Add goji berries in the last 5 minutes of cooking to preserve their nutrients and color.

6. Serve
Enjoy warm, or chill in the fridge for a refreshing cold dessert tea.
