Cordyceps Flower Chicken Soup Recipe (Serves 4–6)
Ingredients
- 1 whole chicken (about 1–1.5 kg), or 1 silkie chicken
- 15–20 g cordyceps flower (虫草花)
- 1 small handful goji berries (枸杞)
- 4–6 red dates (红枣), pitted
- 4–6 dried shiitake mushrooms
- 6–8 cups water
- 2–3 slices fresh ginger
- Salt, to taste
Preparation
1. Soak ingredients
- Rinse cordyceps flowers lightly.
- Soak dried shiitake mushrooms in warm water for 20–30 minutes until softened; slice if large.
- Rinse goji berries and red dates.
2. Prepare the chicken
- Rinse the chicken thoroughly.
- Optional: Blanch in boiling water for 2–3 minutes to remove impurities, then rinse clean.
Instructions
1. Start the soup base
- In a large pot, add the chicken, ginger slices, and water.
- Bring to a boil over medium-high heat.
2. Simmer gently
- Once boiling, skim off any foam.
- Reduce heat to low and simmer for 45 minutes.
3. Add herbal ingredients
- Add cordyceps flower, shiitake mushrooms, red dates, and goji berries.
- Continue simmering for another 45–60 minutes.
4. Season and serve
- Add salt to taste.
- Serve hot, either as a clear soup or with the chicken cut into portions.
Tips
- Silkie chicken (乌鸡) is traditionally used for extra nourishment and a richer, slightly sweeter broth.
- For a clearer, more refined soup, use a double-boiling method instead of direct simmering.
- Avoid overcooking goji berries if you prefer a fresher taste—add them in the last 15 minutes if desired.
