Black Sesame Dessert Soup for Kidney Support (4 servings)

Ingredients

  • 2/3 cup black sesame seeds (about 90 g)
  • 1/3 cup granulated sugar (65 g)
  • 1/3 cup water (for blending)
  • 1/3 cup rice flour (50 g)
  • 2.5 oz rock sugar (70 g)
  • 4 cups water

Instructions

  1. Toast the sesame seeds
    Place the sesame seeds in a dry pan over low heat. Stir continuously for a few minutes until they begin to crackle lightly and release a rich, nutty aroma. Remove from heat and let cool.
  2. Grind into powder
    Transfer the cooled seeds into a blender or food processor. Blend until finely ground. (A mortar and pestle can also be used for a more traditional texture.)
  3. Make the sesame paste
    Add the granulated sugar and pulse briefly to combine. Pour in the 1/3 cup water and blend again until a smooth, thick paste forms.
  4. Prepare the soup base
    In a pot, whisk the rice flour with 4 cups of water until no lumps remain. Add the rock sugar and heat gently, stirring often, until dissolved.
  5. Combine and cook
    Stir the sesame paste into the pot. Continue stirring over low heat until the mixture thickens and turns a deep black color.
  6. Adjust consistency
    Taste and adjust sweetness if needed. If the soup is too thick, gradually add more water until it reaches your preferred texture.
  7. Serve warm
    Ladle into bowls and enjoy while hot.
