Chinese Black Date & Wolfberry Bone Health Soup (4–6 servings)

Ingredients

  • Du Zhong / Eucommia Bark – 4–5 pieces (cut into thick strips)
  • Chuan Gong / Szechuan Lovage Rhizome – about 15–18 pieces
  • Chinese Black Dates – 3/4 cup
  • Goji Berries (Wolfberries) – 1/3 cup (rinsed and soaked briefly)
  • Red Cane Sugar – 1–2 teaspoons, or to taste
  • Mushroom stock – 1 to 1½ teaspoons, or to taste
  • Eggs – 3–4 eggs, hard-boiled (optional)

Instructions

  1. Bring a small pot of water to a boil and gently add the eggs. Cook until hard-boiled, then set aside.
  2. Place the goji berries in a bowl of water, rinse well, and drain.
  3. Cut the Eucommia bark into smaller, manageable strips if needed.
  4. Fill a slow cooker about three-quarters full with hot or boiling water.
  5. Add the Eucommia bark, Chuan Gong, Chinese black dates, and goji berries into the slow cooker.
  6. Stir in the red cane sugar and mushroom stock, adjusting the amount to your taste preference.
  7. Cover and simmer on low for about 3.5 to 4 hours.
  8. Add the peeled hard-boiled eggs during the last 30–45 minutes of cooking to allow them to absorb flavor.
  9. Once done, keep the soup warm in the slow cooker and serve as desired.
