Healing Ginseng Chicken Soup

Ingredients
- 1 whole silkie chicken, chopped into 5–6 pieces
- 12 g ginseng root (Korean or American)
- 8–12 dried red dates (jujube), pitted if desired
- 1½ tablespoons dried goji berries
- 1½ teaspoons salt (adjust to taste)
- 1.8–2 liters water
Instructions
- Lightly rinse the ginseng, red dates, and goji berries under cool running water to clean off any residue. Set aside to drain.
- Add the chicken pieces to a large pot, then layer in the prepared herbs.
- Pour in the water and bring everything to a gentle boil over medium-high heat.
- Once boiling, lower the heat to maintain a slow simmer. Cover partially and let it cook for about 1 hour 50 minutes, allowing the flavors to fully develop.
- Skim off any foam or excess fat from the surface occasionally for a clearer broth.
- Season with salt near the end of cooking, adjusting to your taste.
- Turn off the heat and let the soup rest briefly before serving warm.
