Chinese Herbal Chicken with Angelica Root Soup

Ingredients (Serves: 3–4 people)

Main Ingredients

  • 650g chicken pieces (bone-in)
  • 1.1L water
  • Salt, to taste

Dried Herbs

  • 18g Chinese yam
  • 12g Chinese angelica root
  • 18g codonopsis root
  • 18g Solomon’s seal
  • 12g goji berries
  • 6–8 red dates

Instructions

  1. Bring a pot of water to a boil and briefly blanch the chicken pieces for a few minutes until impurities rise to the surface. Remove, rinse, and set aside.
  2. Lightly rinse all dried herbs and drain well. Add them to a clay pot with the water and bring to a boil.
  3. Add the chicken pieces, return to a boil, then lower the heat to a gentle simmer.
  4. Cover the pot with the lid slightly ajar and let it simmer for about 1.5 to 2 hours.
  5. Season with salt to taste and serve warm.
