Egg Flower Water Chestnut Dessert Soup with Goji Berries (蛋花馬蹄糖水)

Ingredients:
- 14–16 fresh water chestnuts (about 240–260 g), peeled and lightly crushed
- 1 large egg, beaten
2–3 tbsp custard powder (optional, for extra smoothness) - 1/2 cup rock sugar or raw sugar (adjust to taste, ~110–125 g)
- 4 cups water
- 4 tbsp cornstarch (or water chestnut starch)
- 2 tbsp water (to mix slurry)
- 2 tbsp dried goji berries (rinsed)
Instructions:
- Prepare the chestnuts:
Peel and roughly crush the water chestnuts to keep some texture. - Cook the base:
Bring water to a boil, then add the crushed water chestnuts and goji berries. Let simmer for about 5 minutes. - Sweeten:
Add rock sugar and stir until fully dissolved. - Thicken:
Mix cornstarch with 2 tbsp water to form a slurry. Slowly pour into the soup while stirring gently until slightly thickened. - Optional step:
Stir in custard powder (mixed with a bit of water) for a smoother, richer consistency. - Add egg flower:
Turn heat to low. Slowly drizzle in the beaten egg while stirring lightly to create soft egg ribbons. - Serve warm:
Enjoy as a light dessert soup, either warm or slightly cooled.
