Traditional Sweet Potato Ginger Sweet Soup

Ingredients
- 1½ large sweet potatoes, peeled and cut into chunks
- 12 dried red dates (jujube), rinsed
- 3 inches old ginger (about 60 g), sliced
- 50 g slab sugar (片糖), plus extra to taste
- 1.3 liters water
Instructions
- Rinse the red dates thoroughly. Peel the sweet potatoes and ginger, then cut the potatoes into bite-sized pieces and slice the ginger into long strips for easy removal later.
- Pour the water into a pot and bring it to a gentle boil over medium-high heat. Add the sweet potato pieces and cook for a few minutes.
- Add in the ginger slices, red dates, and slab sugar. Reduce the heat slightly and let everything simmer for about 15–18 minutes, or until the sweet potatoes are tender.
- Taste the soup and adjust the sweetness by adding more slab sugar if desired. Stir until fully dissolved.
- Remove the ginger slices before serving. Enjoy the dessert soup warm.
