Nourishing Taro Paste Chinese Sweet Soup (4–6 servings)

Ingredients

  • 500 g taro (peeled, cut into chunks)
  • 1/2 cup dried fox nuts (莲子/芡实, qian shi)
  • 1/3 cup ginkgo nuts (银杏, pre-shelled and cores removed)
  • 6–8 cups water
  • 3–5 tablespoons rock sugar (adjust to taste)
  • 1/2 cup coconut milk (optional, for creaminess)
  • 1–2 pandan leaves (optional, for aroma)

Instructions

1. Prep the Ingredients

  • Peel and cut taro into evenly sized chunks.
  • Soak dried fox nuts in warm water for 20–30 minutes to soften.
  • If using fresh ginkgo nuts, remove the bitter green core inside.

2. Cook the Fox Nuts & Ginkgo

  • Bring 6–8 cups of water to a boil in a pot.
  • Add fox nuts and simmer for about 20 minutes until they begin to soften.
  • Add ginkgo nuts and continue simmering for another 10–15 minutes.

3. Cook the Taro

  • Add taro chunks into the pot.
  • Simmer for 15–20 minutes until the taro is very soft and starts breaking apart.

4. Create the Paste Texture

  • Use the back of a spoon or a whisk to gently mash the taro into the soup.
  • For a smoother texture: blend part or all of the mixture.
  • For a traditional texture: leave some chunks for a rustic feel.

5. Sweeten and Finish

  • Add rock sugar and stir until fully dissolved.
  • Add pandan leaves (if using) and simmer for another 5–10 minutes.
  • Stir in coconut milk for a richer, creamy consistency (optional).

6. Serve

  • Serve warm for a comforting dessert, or chilled for a refreshing version.

Tips

  • Do not overconsume ginkgo nuts—limit to small portions per serving.
  • Adjust sweetness depending on whether you want a lighter TCM-style dessert or a richer treat.
  • You can add a few dried lotus seeds for extra texture and traditional balance.
