Kudzu Root Detox Soup with Dace Fish (Serves 4–6)

Ingredients (Serves 4–6)

  • 300–400g fresh kudzu root (fen ge), peeled and sliced
  • 1 whole dace fish, cleaned (about 300–400g)
  • 80g red beans (adzuki beans), rinsed
  • 1 small piece aged tangerine peel (chen pi), soaked and scraped
  • 3–4 dried honey dates, rinsed
  • 3–4 slices fresh ginger
  • 2 liters water
  • Salt, to taste

Instructions

1. Prepare Ingredients

  • Peel and slice the kudzu root into thick chunks.
  • Soak the aged tangerine peel in warm water until softened, then scrape off the bitter white pith.
  • Rinse red beans and soak for 30–60 minutes (optional for faster cooking).

2. Blanch the Fish

  • Bring a pot of water to a boil.
  • Add the dace fish and blanch for 1–2 minutes to remove impurities.
  • Remove and rinse under cold water.

3. Optional: Pan-Fry for Flavor

  • Lightly pan-fry the fish with a bit of oil and ginger until slightly golden.
  • This enhances the soup’s aroma and reduces fishiness.

4. Simmer the Soup

  • In a large pot, add water, kudzu root, red beans, aged tangerine peel, honey dates, and ginger.
  • Bring to a boil, then reduce to low heat and simmer for 1 hour.
  • Add the dace fish and continue simmering for another 45–60 minutes.

5. Final Seasoning

  • Add salt to taste.
  • Skim off any excess oil before serving.
