Astragalus Miso TCM Soup Recipe (Huang Qi Broth)
Ingredients (Serves 2 – 3)
- 3–4 slices dried astragalus root
- 1 small strip kombu seaweed (about 3 inches)
- 4–6 fresh shiitake mushrooms, sliced
- 1½–2 tablespoons red miso paste
- 2–3 tablespoons chopped green onions
- About 2 cups chopped kale, chard, or other dark leafy greens
- ½ cup firm tofu, cubed
- 4 cups water
Instructions
- Pour water into a pot and add shiitake mushrooms, kombu (rinsed), and astragalus slices.
- Bring to a low simmer, cover, and cook for about 18–25 minutes.
- Remove the kombu and astragalus and discard.
- Lower the heat and stir in the miso paste until dissolved.
- Add tofu, green onions, and leafy greens.
- Heat gently for a few minutes until everything is warmed through. Avoid boiling after adding miso.
- Serve warm.
