Green Bean TCM Dessert Soup
Green Bean Dessert Soup (綠豆沙) (Serves 3 – 4)

Ingredients
- 3/4 cup dried mung beans (about 150–170 g)
- 7 cups water
- 1/3–1/2 cup rock sugar or raw sugar (adjust to taste)
Instructions
- Prepare the Beans
- Rinse the mung beans thoroughly under cool water.
- Remove any debris or small stones.
- Soak in a bowl of water for 3–5 hours.
- Drain and discard the soaking water.
2. Cook the Soup
- Add soaked beans and fresh water to a large pot.
- Bring to a boil over medium-high heat.
- Once boiling, reduce to a gentle simmer and cover partially.
3. Simmer
- Cook for 35–45 minutes, stirring occasionally.
- Keep an eye on the pot, as it can foam and overflow.
4. Check Texture
- The soup is ready when the beans soften and begin to split open.
- For a thicker consistency, simmer longer until more beans break down.
- For a lighter, more brothy texture, stop cooking once beans are tender.
5. Sweeten
- Add sugar gradually, tasting as you go.
- Stir until fully dissolved.
6. Serve
- Enjoy warm, or chill and serve cold for a refreshing version.
