Ginger-Infused Chicken & Peppercorn Broth

A comforting, gently warming soup perfect for cooler days.

Ingredients

  • 4–5 slices fresh ginger
  • 4 chicken drumsticks
  • 1.25 litres water
  • 4 dried honey dates
  • 4 dried shiitake mushrooms, soaked until softened
  • 6 red dates (jujubes), rinsed
  • 2 green onion whites, cut into 2-inch pieces
  • 1½ teaspoons whole black peppercorns

Instructions

  1. Rinse the chicken drumsticks and trim any excess fat if needed.
  2. Place the chicken, ginger, soaked shiitake mushrooms, honey dates, red dates, and green onion whites into a soup pot.
  3. Add 1.25 litres of water and bring to a gentle boil over medium heat.
  4. Once boiling, reduce to a steady simmer and add the black peppercorns.
  5. Cover and simmer for 75–90 minutes, allowing the flavors to fully develop.
  6. Season lightly with salt if desired and serve warm.

Optional: Lightly crush the peppercorns before adding for a stronger warming effect.
