Nourishing Pork Bone Soup with Daikon and Carrot

Ingredients

  • 700–900 g pork ribs, cut into pieces
  • 1 medium daikon (white radish), sliced
  • 2 ears corn, cut into sections
  • 3 carrots, peeled and cut into chunks
  • 4 garlic cloves, lightly crushed (skin on)
  • 3 slices ginger (or 1 tbsp cooking wine, for blanching)
  • ½–1 tsp salt (adjust to taste)
  • 1–2 tsp white vinegar
  • 2.5–3 liters water

Instructions

Step 1: Blanch the Pork

  • Place pork ribs in a pot with cold water and ginger (or cooking wine).
  • Bring to a boil over high heat.
  • Skim off any foam.
  • Drain and rinse the ribs under clean water.

Step 2: Start the Soup

  • Put the cleaned ribs into a fresh pot.
  • Add hot water, garlic, vinegar, and a little salt.
  • Bring to a boil, then reduce to low heat.
  • Simmer for about 45 minutes.

Step 3: Add Vegetables

  • Add carrots and daikon.
  • Continue simmering for 1 hour.

Step 4: Finish Cooking

  • Add corn and cook for another 30 minutes.
  • Keep simmering until the pork is very tender.

Step 5: Final Taste

  • Taste the soup and add more salt if needed.
  • Serve hot.
