Herbal Black Bean & Fleeceflower Root Chicken Soup (2–3 servings)
Ingredients
- Chicken: 3–4 drumsticks
- Black beans: 60g
- Chinese fleeceflower root (He Shou Wu): 5–6 small pieces
- Goji berries: small handful
- Black dates: 5–6 pieces
- Garlic: 5 cloves, lightly crushed
- Water: about 1.5–2 liters
Instructions
- Prep Ingredients
Rinse the black beans, goji berries, and fleeceflower root. Lightly crush the garlic. Rinse the chicken drumsticks. - Blanch the Chicken (Optional but recommended)
Bring a pot of water to a boil, add the chicken briefly for 2–3 minutes to remove impurities, then rinse and set aside. - Combine Everything
In a large soup pot, add the chicken, black beans, fleeceflower root, garlic, black dates, and goji berries. - Add Water
Pour in enough water to fully cover the ingredients (about 1.5–2 liters). - Bring to a Boil
Heat on high until the soup comes to a boil, then reduce to low heat. - Simmer Gently
Cover and let it simmer for about 1.5 to 2 hours, allowing the flavors to fully develop. - Finish & Serve
Skim off any excess oil if desired. Serve warm as a nourishing herbal chicken soup.
